This recipe uses Poetic Tea’s “Haiku” which is Genmaicha, a popularJapanese green tea that is blended with brown rice and popped corn. The distinct flavor of Genmaicha gives this tasty, wine-free scampi sauce an edge.

To make enough scampi sauce to accommodate one pound of shrimp:

  • 1 level tbsp of Haiku (Genmaicha green tea from Poetic Tea Company)

  • 1/2 c. boiling water

  • 1 ounce (2 Tbsp butter)

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tsp minced garlic

  • 1 tsp lemon juice


Here’s the scoop:

Prepare Your Sauce

  • Bring half-cup of water to a roaring boil and let cool for a minute or two;

  • Place a tablespoon of Haiku (Poetic Tea Company’s Genmaicha green loose tea) in an infuser ball and pour water over;

  • Let tea brew for three minutes, remove loose tea, and add butter;

  • Stir until butter melts and add in salt, pepper, lemon, and garlic.

Making It a Meal

Over medium heat, sautée one pound of shrimp in sauce just until shrimp turn pink and serve immediately or marinade one pound of cooked shrimp in your sauce for at least an hour in the refrigerator and reheat when ready to serve.

Shrimp scampi is delicious served over fettuccine or linguini. Top with fresh grated Parmesan, red pepper flakes, chopped parsley, and serve with a lemon wedge. Add additional salt and pepper to taste.
